Ingredients :

  • 4 corn tortillas 6-inch
  • 1 tbsp avocado oil or vegetable oil
  • 4 eggs or 1.5 cup egg substitute
  • 2 tbsp cheddar cheese shredded
  • 2 cups salsa
  • 1/4 cup black beans prepared
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 4 small corn tortillas
  • 1/4 cup shredded cheddar cheese
  • Sour cream, for serving (optional)

Directions :

  1. Preheat oven to 450°F.
  2. Lightly brush tortillas with oil on both sides and place on a baking sheet. Bake for 5 to 10 minutes or until tortillas are crisp on the edges and starting to brown. Remove from the oven and set aside.
  3. Spray a large skillet with nonstick cooking spray.
