Here is my favorite recipe for Bacon and egg on spinach bed. It is so easy and only 309 calories per serving!
Ingredients:
- 1 egg
- 5 oz bacon
- 3 no cherry tomato
- 1 handful spinach
Directions:
- Fry the bacon in a pan on medium high heat until crispy. Put aside on a plate. Leave the rendered fat in the pan.
- Fry eggs into the bacon grease in same pan.
- Set fry egg and bacon slice in plate on spinach. Cut the cherry tomatoes and serve along with egg and bacon.
- Sprinkle salt and pepper to taste.
Note: Leave out cherry tomatoes to make this recipe a paleo option
